I honestly enjoy veggies so it's not hard for me. The main thing is I mostly like them cooked. There's several easy ways to prepare stuff:
1. Buy frozen veggies and add butter and your own seasoning to them, like someone earlier mentioned. Dark leafy greens are good for you, but don't keep long in the fridge. This is super convenient.
2. Sauté them in a pan with butter (or even better, bacon fat) and seasoning. I love zucchini cut into half-moons or chopped cabbage like this.
3. Roast in the oven, after tossing in olive oil and seasoning. Broccoli is great when it's just slightly crunchy and browned. Potatoes and carrots are nice.
4. Just drink juice. V8 is easy to get and has a variety of things besides just tomatoes. Bolthouse has a carrot juice that's good. I'm too poor for a juicer but that would give limitless possibilities.
5. Similarly, with fall coming I'm thinking of trying to make soup with vegetables and blending them so I have something comforting and warm to sip alongside broth.
I do like salads, but I always overcomplicate them when making them at home. I try to buy a variety of greens, dressing, cheese, olives and meat. They're good, but chopping everything up and eating it all before the greens wilt is not something I feel like doing too often.
