Eating more veggies

Anyone have good recipes to make broccoli nice? I'm trying to eat more of it for the insane amount of nutrients it has, I like veggies generally but broccoli feels kind of like a chore to eat. Started sprinkling it with parmesan, any other ideas?
put it in your curry, it makes the whole thing a bit less dense and soaks up sauce rly good
i like thai curry with chicken, buckwheat, carrots & broccoli
 
Since fall is rolling around I decided to buy a small pumpkin and learned that stuffed pumpkin is pretty flexible. I put some egg and jalapeños in it, baked it and it was pretty good. Needed cheese or meat in it though. I imagine you can get creative and substitute meat or eggs with different veggies, substitute meat, beans, tempeh, etc. (And I think the seeds already provide a little protein).

(I guess it's technically a fruit but whatever.)
 
I honestly enjoy veggies so it's not hard for me. The main thing is I mostly like them cooked. There's several easy ways to prepare stuff:

1. Buy frozen veggies and add butter and your own seasoning to them, like someone earlier mentioned. Dark leafy greens are good for you, but don't keep long in the fridge. This is super convenient.
2. Sauté them in a pan with butter (or even better, bacon fat) and seasoning. I love zucchini cut into half-moons or chopped cabbage like this.
3. Roast in the oven, after tossing in olive oil and seasoning. Broccoli is great when it's just slightly crunchy and browned. Potatoes and carrots are nice.
4. Just drink juice. V8 is easy to get and has a variety of things besides just tomatoes. Bolthouse has a carrot juice that's good. I'm too poor for a juicer but that would give limitless possibilities.
5. Similarly, with fall coming I'm thinking of trying to make soup with vegetables and blending them so I have something comforting and warm to sip alongside broth.

I do like salads, but I always overcomplicate them when making them at home. I try to buy a variety of greens, dressing, cheese, olives and meat. They're good, but chopping everything up and eating it all before the greens wilt is not something I feel like doing too often.
 
Eating veggies is the easiest shit in the world and as a lardass that eats lots of veggies and lots of other things I cannot understand how ground adults struggle with it.
