It's a paste made from deboned, minced white fish. Egg white, starch, vegetable oil, or sugar shaped and dyed red on one side to look like crab meat.

In Asian food places they call it 'imitation crab,' 'crab,' or 'crab stick.' I see it for sushi and poke bowls in particular.
I don't know why it isn't false advertising, but it tastes okay and is often cheaper than the other meats.
