Parmesan, mozzarella & cheddar... when I was a kid and we had meatball subs at school, I used to have a part of my plate that was just parmesan for some reason, and I'd eat it with a spoon. Except my knowledge of cheese flavours is pretty limited... I tend not to stray out of my comfort zone.

American is my opinion, since it's a good mix of sharpness, mellowness, and melt factor. It's also why I make Philly style steaks with it as a compromise between Whizz and Provalone.
 
I've never understood why anything that isn't at least somewhat solid at room temperature is called "cheese" at all. My gripes are mainly with cottage cheese in all its terribleness, but ricotta doesn't get off the hook either. Don't eat a hastily-made lasagna or you'll run the risk of getting a mouthful of nothing but ricotta cheese. If it happens, it'll make you gag. It's like biting into a big spoonful of mayonnaise in the middle of your pasta.

I'm starting to become partial to blue cheese on a burger. Pair that with some barbecue sauce, holy fuck-knuckles, can't describe how damned good it tastes.
There was a burger joint I used to go to in Maine that did a blue cheese, BBQ sauce and bacon burger. Sadly it closed down a few years back and I’ve not found anything nearly as good yet.

I had a stilton cheese burger once.
 
Manchego, easily my favorite cheese.
Port Salut works as second place.
 
One of the best I've recently tried is the Smoked Oaxaca... iirc it's a goat cheese smoked. Tastes great both melted or solid.
 
I spoiled my self for lunch at work since the weather is perfect like perfect perfect. Had a cigar, some stoned wheat thins and Humbold Fog. It's just amazing, if you've never had it I highly suggest it, even people who aren't big into goat cheese love it. When I get this I hide it from the Mrs. <_<
 
I like sharp cheeses but they are migraine triggers.:(

The only cheeses I don't like are American and jack. They have literally no taste. Monterey jack tastes like absolutely nothing.

I also like cottage cheese with garlic powder, pepper and Italian seasoning. Then I put in some tomatoes and it it with potato chips. Cottage cheese is also good with pork.

I guess cottage cheese doesn't have much taste either now that I think about it.
 
Goat cheese, pepper jack or feta.

In terms or cheap, I'm quite partial to American or Colby jack.
