Gouda cheese is best cheese imo. Probably closely followed by pepper jack. After that I'd say mozzarella cheese.

In the spirit of making cheese a major fixture of politics, I think I like those 3 best because they melt really nice in the oven which they actually go into and don't bitch about almost a century later

It mixes with other cheeses well too imo. Not so overpowering it dilutes everything else, but it's there enough to taste it.
