Buffalo Chicken Mac and Cheese. Its heavenly. Just use crock pot to cook chicken and it practically takes care of itself. I also used to put garlic parmesan sauce with a little bit of fried chicken or steak in a white mac. Fantastic. Could even put it between two pieces of bread if you wanted.

I love Jamie Oliver's baked "Killer Mac & Cheese", basically Mac and Cheese baked in the oven with tomatoes. Simple, but incredibly delicious.

The recipe seems to only be available in German, shout if you need a translation:

I always make mine with a roux to blend the cheese so to that I'll add a little dried mustard, cayenne, and whatever hot sauce to taste. I like spicy food though so that's really a to taste kind of thing. You don't want it overpowering, just enough to know it's there. The mustard flavor doesn't come through in anything more than another spicy undertone. If you're using a white cheese you can add a bit of nutmeg.

Instead of Velveeta or whatever, make it with smoked Gouda. Add in some Inglehoffer applewood smoked bacon mustard (trust me) and you've got a simple change, but it tastes great.

Got some cheese sauce going, water's boiling,
aldi velveeta, shredded cheddar, butter, sour cream, horseradish, spicy germanish mustard, fresh ground pepper
sauce is good but not "disregard making noodles because you ate all the sauce before the water came to a boil" good, still pretty good though

My friend's dad growing up used to put some black pepper into his when he made it for us.

Not really spicy, but it adds some extra flavor to it.
