Amber over-indulges because she's a narcissist and thinks she deserves it. She's an ill educated, stupid, non-curious creature, so she'll always choose quantity over quality.
Overeating for almost two decades has lead to her stomach stretching out, which in turn causes her to feel "empty" frequently. Then she overeats (because she deserves it) causing her stomach to stretch some more.
Add that to the fact that Amber has created an hermetic sealed bubble that she calls life where behaving like a grown up is absolutely forbidden and we get what we see now.
I'd like to point out that every time Amber claims to be allergic to cats, she also points out the culprit and it's one cat out of the bunch.
