I heard Chipotle was very good in the early days where they would leaf the lettuce and cook everything on site. But then the food poisoning scandal forced them to move it all to central prep centers and they became like most corporate chains which just heap the preprepared ingredients together.

I would have liked to taste this early version. Might be worth the risk of a little diarrhea. But maybe not the major disabilities some of these e coli infections can cause.

They grill the chicken and steak on site. Not sure about the carnitas, but I think the guac and salsas too.

The one thing I know they do centrally is the barbacoa, which is the best thing on the menu. Just expensive.

Yeah. The avocados are mashed, and everything except the tomatoes (which they get in containers pre-diced) is chopped up on-site. Chips are fried up on-site, too. This is assuming nothing changed after 2019, however.

I wasn't involved in the grill, so I don't remember a lot about it.
 
For us South/Midwest folks, Cafe Rio is the shit. Sweet pork barbacoa is amazing. Burrito enchilada style.
Haven't lived or traveled near one in many years but I heard Cafe Rio has gone downhill in a big way. I get a huge craving for Cafe Rio salad sometimes, I can dupe most of it but can't replicate the huge homemade tortilla.
