There is the term ‘Ulster Scots’ and it’s even a very limited, under used language, but I don’t think most Unionists/Protestants would consider themselves ‘Scottish’ in the way that Nationalists/Catholics would consider themselves full Irish not just Northern Irish.

Very distantly, thats more of a founding myth. It's like how Appalachians derived from Scottish people (Scots-Irish) aren't ethnically scottish anymore. Something like 30-40% of them are "Irish". The main point is that they consider themselves Ulstermen or Northern Irish, part of the Union.
