Long story short:
In this universe, the Avatar (who'd be the equivalent of the Dalai Llama) would be reincarnated at the moment of their death among another country's people. The order is Fire Nation-Air Nomads-Water Tribes-Earth Kingdom. After abandoning his best friend at the time, Avatar Roku (who was from the Fire Nation) to his death, Sozin figured that that since the next Avatar would have been reincarnated among the Air Nomads as per the order, he should simply wipe them out and prevent a problem from arising in the future (since the Avatar would have the ability to use all four elements instead of just the one his incarnation would be attuned to as well as being able to converse with his previous incarnations for their advice and experience to resolve conflicts in this world.
Due to various circumstances, the new Avatar (Aang) did manage to evade them and was in suspended animation for a century as the rest of the Air Nomads were decimated.

My absolute favorite part of this whole thing was when the guy tried baiting your friend to reveal to everyone why he was thrown out of the restaurant, and in the process he completely destroy his own credibility. And he stayed totally quiet after that when he realized how badly he fucked up.

It always amuses me when these people think they can get on an academic high horse when they've done way worse things than they people they're criticizing.
