But no really, when the pirated version of a product is substantially better than the lawfully-obtainable versions of it (i.e. no ads, interruptions, time gates, etc.), it's the producer/seller who has a problem, not the consumer.

I haven't plugged a TV into a cable or satellite feed for over 15 years now. Instead, what you do is you get yourself the cheapest, dumbest, most featureless 65" 4k LCD TV you can buy, and mount it on the wall above your desk where your regular computer/workstation is. Then you plug that sucker into your PC, and BOOM! Now you've got a second (or third) display to run whatever videos on it you want from whatever source while you're doing other stuff with the other monitors. Don't let it talk to the network (no wifi, no hardwired connection). Don't interact with its gay little apps. Stick it on HDMI1, mute the volume (you're running sound through a superior method on your PC, right?), and use it as desired. Never shall it show an ad or even any material you didn't explicitly drag to that screen and click "play" for.

I've been observing that the meats offered at the regular stores are all Choice and even though it's supposed to be just one grade down from Prime, there's actually a scale within that grade as well. And the cuts are getting worse insofar as good marbling.
If you can possibly afford it (and have the space to accommodate), get hold of a butcher who works with a reliable farm, and buy yourself a "half beef" -- literally half a fuckin' cow, butchered on demand and carved up into cuts you specify (or that the butcher can recommend for you). It's easily a couple thousand dollars at this point, but it's enough beef to completely fill a decent-sized chest freezer and you'll be set for a year, and ultimately it's still substantially cheaper than the ridiculous prices being charged at the grocery stores (and even warehouse clubs) now.

This, combined with a big slow cooker, and you're set. A lot of the cow is going to be the tougher cuts, but that just means they're perfect for a low and slow simmer. You'll end up saving even more money on the grocery bill because you'll fill out so much of the basic cheap stuff for stews and other slowcooker dishes, and you'll have so much in the way of easy leftovers that convenience meals don't stand a chance - who'd reach for a frozen dinner over amazing leftovers made exactly to taste?

Pretty sure everyone immediately in this convo chain knows all this, but we get a lotta thread tourists, never know when someone needs a good idea like this seeded in their head.

I just want to say this went off great. Didn’t use chives (fucking worthless garnish), used Dijon and garlic and teriyaki with Worcestershire for the butter spread, beautiful and bloody rare with great crispy skin.

We explicitly said for guests to bring sides so we didn’t need to occupy space in the oven and fridge and there were no freeloaders, everyone was happy. Will be doing this again for New Years Day with the coleslaw and black eyed peas.

And hey, black stalker got run over by some gay guy and it seems he will get away with it, then muzzies got killed in Nigeria, just need to see some liberal get arrested for domestic violence tonight and that will be a treat.
 
Thinking seriously about getting a sous vide machine, all things considered.

You won't regret it. Sous vide steaks and chicken are so good. I season and vacuum seal them up, freeze them, and then go straight from the freezer to the bath. 2 hours at 127° for steak, 2.5 hours at 144° for chicken breast. 1 minute grill sear per side on super high heat. Turns out perfect, I'll never go back to just grilling.

Get an InstantPot instead of a dedicated sous vide heater if you don't already have a pressure cooker. The newer ones have sous vide and a ton of other functions.

My local Costco has all USDA Prime cuts in the 20's. Even filet. $24.99 for ribeye and strip, $28.99 for filet. Still high compared to historically, but nowhere near 40+. That's insane. I like doing Prime strip and Choice filet, both $24.99 right now. Makes a killer boneless Porterhouse.

We got ourselves a chest freezer back during the pandemic and purchased a monthly beef share plan consisting of various fresh roasts, steaks and burger patties. But since it's just the two of us, it was more meat than we could keep up with, so we opted to just cancel/purchase as needed and stock up if they have deals.

Their chicken is also excellent to rotisserie in the air fryer not only for the flavor but for the superior stock it yields. Our butcher also has nicely gelatinous beef stock that we make sure we have on hand as well.

eta: @FatMan thanks for the advice - being able to go straight from freezer (we have a vacuum sealer) to water bath would be so damn convenient. Sold!
