Probably Springer a bit more, but it is really close. If Maury had kept his earlier format from the late '90s to mid-2000s (the era that South Park lampooned) where he did other stuff besides paternity tests and lie detector tests, he would have likely been even better.

Springer, especially when guests were allowed to have actual fights. Both were best in their first seasons, with Springer, the fights became more subdued and Maury just does "Who's your baby daddy".

Springer really fell off in later years, didn't even bother to make the scripts believable.
Maury was more authentic, he would just give black people (or black-adjacent white trash) a free flight, hotel, and Red Lobster gift card and let them do their thing. It was a fascinating look into a different world. I loved showing clips of it to non-Americans. However, I think the show was better when they also had different topics (freak shows, people with bizarre phobias, etc.) instead of every episode being a baby daddy/lie detector one.
