I think browning minced meat in small batches is a massive waste of time for an extremely lackluster reward: too much surface for water loss., you always get an uneven, sad browning. All the Maillard reaction I get for the - extremely rare - ground beef ragout, I get from the side fond because those tiny clumps of browned ground beef chews like rubber. Shredded meat from larger chunks properly browned are always preferred for ragout.
Water? what kind of low quality ground beef are you buying. Sound like this is more of a quality issue and the fact that you are overcooking it and using the wrong sized pan. Always, always use a bigger pan than you think you need as you'll overcrowd you food and not get an even cook. Most people use the wrong pan and boil their meat in their own juices instead of searing alongside another common mistake many people do is putting the food on a cold pan which in most cases is wrong save for some exceptions like carbonara as you actually want to slowly rend the fat out of the guanciale as cooking the guanciale on a high heat can have it become hard as a rock.
Does the judge really think this will hold up to any kind of scrutiny when the defense used the footage in their case. This excuse is on the level of a child trying to hide the evidence after being caught with their hand in the cookie jar.
