Sounds like you have too much air in the mixture if you are getting ice crystals like that. I make it with a machine and using the plastic bag method and never have issues with crystals forming.

I made it a few times, but a long time ago. From memory I used a blender to combine full fat milk, egg, sugar and I used a chocolate porter stout for flavor (this was a recipe tailored for using a beer in the ice cream). Then I poured the resulting mixture into a sealed plastic container and put into the freezer. Then I would take the half-frozen mixture out and manually churn it with a fork before putting it back in for another ~30 minutes and repeating the process a few more times until I eventually got impatient and decided "this is good enough".

It would kill hundreds of millions of people instantly, and basically all of what they use for farmland would be destroyed. Massive amounts of trash and industrial waste would be spread across the region, meaning what land is left would be unsuitable for farming, forever. I think a large amount of their industrial base would also be instantly wiped out.
