My favorite easy/lazy crockpot lunch recipe is: 2-ish lb chuck or other cheap beef roast, diced onion, 1 jar pepperoncini or pickled jalapenos with juice, 1 can/bottle dark beer (better flavor than light beer imo), garlic, salt/pepper, 2tbls italian seasoning; dump it together and cook on high for 5 hours or low for 8 overnight. Shred the meat with 2 forks and serve on a hoagie roll with sliced provolone. I put my meat/sauce in a separate container and assemble the sandwich at work so it doesn't get soggy. You can make a poor man's french dip with chuck in the crockpot as well, beer or stock, and a packet of au jus seasoning; same method. Or get a tray of boneless chicken thighs, some jerk paste (comes in a jar mild or spicy), and 1-2 cans of beer or stock, high for 4 hours, or low for 7, shred chicken, and serve over rice with or without a frozen veggie.
