This is funny because male and female eye sight is actually different. Women can see colors better than men and men have a higher sensitivity for fast moving things. Not only that but women also have a wider peripheral vision so they actually have the upper hand when trying to find something, as they see more color and a larger area than men. Men have more of a tunnel vision which helps them focus on objects. Makes sense in a hunter & gatherer species.
So yes, this guy has literal "man vision" and there is nothing he can do about it.

We soon heard from the department chair that an offended participant had lodged a complaint about how sex is irrelevant for this work, we need to respect people's genders, etc. (This was quite a while back. I've earned my degree and gotten tenure since then, so I can only fucking imagine what it'd be like now.)

It is built into ethics boards now - you almost always need to explicitly justify why you are asking about sex rather than gender, even when you are measuring something that uncontroversially (in a field) relates to sex, like estrogen or testosterone.
