Levelling up doesn't do anything other than raise your stats a bit, IIRC. I still try to grind my level out to the next multiple of 5 before...

It's mostly something you do late game to level up your materia. The true grind is morphing stat sources. You gain very little just from levels.

Level Grinding isn't a thing in any game if you aren't a moron and can actually manage the battle system.
