I found Jellyfin's setup easier, it's metadata generation better and had more luck tweaking/customizing it's interface than Plex. YMMV but...

Its more stable than plex, if you transcode a lot plex tends to hang up. that said jellyfin doesnt to do hdr so in stuck with plex.

Its free and open source. so if you don't like something, you can just fork the project and fix the issue yourself. If you have the coding talent.
