The games after FFX kinda suck, and the ones prior were on much weaker hardware so FFX kind of wins by default, but they're definitely amazing...

Always enjoyed FF8's Odin swooping in and killing my enemies for me.

FFIX is the one you're looking for. Knights of the Round is the best single summon though.

All of them, the Summon System in FF10 was Garbo.
