I saw a thing about this recently and there are a couple reasons. First the suitable beachfront for landing is really small* and the back of the island is really mountainous so the defenders are at a big advantage especially if they're just trying to buy time for the US to get involved. Second while they don't have nukes the three gorges dam is within missile range. China will of course have missile defense but if they manage to hit the dam it instantly wipes out like 10 large Chinese cities so there's some MAD-like deterrence. Third the Taiwanese will probably just destroy their fabs (which is easy because they are fragile) if it looks like China is going to capture them so there's not much economic incentive to invade.
