In the builds of Bloodborne months before release Lawrence was your friend whom you traveled to Yharnham to find, for example. Also Gehrman was originally two seperate characters: the guy in a wheelchair that we see in the released game and a different character that we would fight at the end as we do with Gehrman in the released game. If you look at the model used for the fight against Gehrman at the end you can see that the face isn't Gehrman's: they just pasted Gehrman's face texture onto another character's model, the cut character we never got to see because they were combined into Gehrman.
In Dark Souls 3, Wolnir was originally one of the Lords of Cinder and you would fight him in Yhorm's boss room and a billion other changes.

DS2 suffers from monobuild syndrome. What I mean by that is that with the exception of some weapons that have absurdly high stat requirements, because scaling is busted and spices are a thing, the best way to play the game is by only leveling scaling stats up to the minimum gear requirements necessary for what you plan on using. Because soul memory is a thing, all roads lead to bloated overleveled havelmonsters. Even if you're planning on playing a grug build, unless you're truly dedicated to the rp, getting some casts, especially some healing miracles, is a huge boon early. If you know what you're doing, it's entirely possible to play the game as a pure caster. That's just general advice that obviously flies out of the window when making pvp builds or hyper specific builds. The honest to God best advice I can give is to simply find a weapon class that you like, decide which school of magic you like the best, and play some kind of spellblade.
