A woman without ovaries and a man without testicles are still female and male respectively, because the rest of their reproductive system has parts that would ordinarily support pregnancy or impregnating respectively, lacking the anatomy to support the other sex's functions. And a transwoman who takes exogenous hormones and gets surgeries to look female still isn't female; one still developed a reproductive system to produce sperm and did not (cannot) develop one with the internal parts women naturally develop to potentially enable pregnancy.
